This past week has been beautiful! Seriously, what month is this? My boys were outside the other day with no shoes or shirts and it was hot! In February!
The boys and I had such fun running around the yard, going to the park, playing games and getting dirty. It was a nice little break from the cold weather. This week it’s back to rain and cold but I feel a renewed stamina so I think I can survive the rest of this winter now. I just need to figure out how to manage my bear cub’s energy since they’re stuck inside now. I think this afternoon we may bake chocolate chip cookies and play hide and seek.
Speaking of cooking, here is this week’s menu and shopping list. It’s a simple week, without too much cooking involved. There are a few new recipes for you, including one of my family’s favorites, Walnut Pesto Pasta. I usually make it in the summer time but I’ve been craving it because of the warm weather. I hope you enjoy these meals.
- Monday: Lunch-frozen pizza and mandarin oranges. Dinner-Tacos, a Toby favorite.
- Tuesday: Lunch-ramen and applesauce. Dinner-Walnut Pesto Pasta
- Wednesday: Lunch- crackers, summer sausage, cheese, hummus and avocado. Another of Toby’s favorites. Dinner-Porkchops, roasted red potatoes (from the blog My Organized Chaos) and salad. With the pork chops, I don’t follow a recipe. I usually pan fry them after tossing them in brown sugar, sage, ground ginger and garlic. When they’re done, I pour some orange juice on it and let it caramelize. It’s super yummy!
- Thursday: Lunch-Chicken strips and fries. Dinner-Leftovers.
- Friday: Lunch-PB&J and popcorn. Dinner-Chicken Salad Sandwiches. I don’t follow a recipe for this. I shred a rotisserie chicken (which I purchase day of so I didn’t include it in the list) and add mayo, walnuts, celery and grapes.
- Saturday: Lunch-Kielbasa and pasta. Again, I just season with olive oil, salt and pepper. It’s simple but everyone eats it and it’s filling. Dinner-Beef stew (from the blog The Diary of A Real Housewife) and my favorite Red Lobster biscuits.
- Sunday: Lunch-Leftovers. Dinner-Spaghetti and garlic bread.

I hope you enjoy the Walnut Pesto as much as we do! If you want to make it a bit more filling, you can grill up some chicken and toss It in there.
As for snacks this week, I may try a new hidden veggies recipe: Spinach brownies. I’m hoping that it tastes and looks more like chocolate than spinach. I’ll let you know.
So last week, I made a big leap forward with Toby’s picky eating. I introduced him to his new friend, the food processor. I showed him how the processor takes big things and chops them up so small that he can’t tell what they are and so he can’t feel it. So, when those small pieces are mixed in with other things, you can’t see or taste them. Believe it or not, this worked!! I made meatloaf with processed-to-pulp onions and he ate it!!! Then, (pause for effect) I made potpie. I put an entire frozen bag of peas, carrots, green beans, and CORN (his least favorite thing in the world besides Halloween and having lotion put on him) in the food processor and made a very nasty looking paste.
Really, it was not appealing to look at. However, when mixed with cream of chicken soup, chicken, and salt and pepper and hidden away in a tasty pie shell, it actually tasted pretty good! And though he did ask what the molecular orange pieces were (“carrots and spices” was my response. Not a lie. Not the whole truth.), he did eat ¾ of the meal. He tolerates carrots so it was the safest veggie to go with. WIN!!!! Since then, when he asks about vegetables in the meal, I just tell him “The food processor is your friend” and he goes with it. He may not love the meal, but he will at least try it and eat a few bites and I’m fine with that. This gives me so much hope! Who would have thought? This is miles from the two hour green bean battle we had last year. Bad memories there. Ugh.
Anyway, that’s my success story for the week. Also, those wine and fruit smoothies were just the thing this mama needed. 😉
